Yesterday after a hard day's work and having eaten my delicious stew, I did not feel like stew again. I needed a break so I opted for a colourful salad - iceberg lettuce, red, yellow and orange pepper, cuke, celery, roasted walnuts (it tastes a little crunchier), white onion - I did not have red onion which is what I might have used but white onion tastes just as fine.
Dressing is low, low-fat but delicious and tasty
3 tablespoon water add lemon, lime and some white vinegar
salt to taste (I use rock salt)
1 tsp sugar
1 tsp sugar or substitute - stevia etc
1 tsp hemp oil or olive oil (whatever is available)
half tsp freshly pounded black pepper,
a pinch of cayenne pepper (optional)
2 oz chunked low sodium Swiss cheese (you may use the cheese of your choice)
shake it all together and put as much as you want over your salad, toss and serve. I sprinkled the top with some cayenne pepper. That was dinner - delicious. Later I had a cup of unsweetened yogurt and a very bad mango. I don't know why supermarkets bring mangos at this time of the year. They are absolutely no good. I promise myself I will not buy another mango until the summer. They as expensive, they have rosy cheeks but when you cut them they taste horribly sour or tasteless and I can't get my money back. (Sorry for this aside)
