It's after the holidays and we're all trying to cutback on all the bad foods we ingested. I have to watch my cholesterol and I am trying to lose a few extras that I inherited due to gluttony. This recipe I call eggizza.
The base is egg white, plain and simple. For a single serving I place about 1/4 cup egg white at the bottom of my non-stick small pan with a teaspoon or less of olive oil.
Next I prepare the topping - three varieties of mushroom, shiitake, crimini and oyster, one medium onion, garlic, a handful of kale - saute everything together - saute the onions and the garlic first then add the kale and the mushrooms last.
Season to taste. I like that saltfree seasoning, a bit of fresh parsley from my indoor plant, cumin, a tiny piece of coarse salt and hot chili pepper . When that is done place everything on the egg white that is already cooked and let it blend together for a minute or so. For those of you who eat cheese, you can top that off with some grated cheese ( I topped mine off with some pieces of dried seaweed) and whalla a splendiferous, delicious meal cooked in about 10 minutes. It is very filling.
I practice food combining; therefore I do not mix carbs with protein. I eat them separately. About three hours later I may try a slice of Ezekiel bread and a cup of tea.
Try it, it's great and I am sure all that must be about 300 calories. It's low sodium, low cal, low-fat and low everything.
