This is a recipe I saw on a cooking show and adapted to my own taste. I am not one for following recipe to the letter. I loot at the big picture i.e what kind of food it is and how am I going to do it using the same or similar
This is one for the slow cooker and
Bison stew
Here's how I did it
1 med sized cabbage
2 med onions
I red pepper
2 zucchini
I package frozen mixed mushroom
1 large egg-plant.
1 lb beef (or meat of your choice) season with beriberi Ethiopian seasoning, a tsp cumin, a pinch of sea-salt Set aside for about l hour.
Method
Cut eggplant in big chunks saute and put in crock pot
cut up onions and garlic saute and add in the crock
saute zucchini and cabbage and add all that to the rest
finally saute beef, bison or elk or lamb whatever is your taste - as saute I do with olive oil
stir everything together in the crock pot add a little water and let cook on high for about 2 hours before lowering it to medium for another hour and then low. Season with some steak seasoning, 1 tsp. black pepper. A cup of coconut milk is optional - this adds a really nice touch. I love the taste and essence of coconut, anything with coconut is as big hit with me.
Let it cook and when you think its done - the meat especially,chow down. I don't know for sure but it must be a great slimming food because of the vegetables and simplicity of it. This is my meal for the week. I take a container full to work and eat a cup each day. You can serve this with rice as well. However as I am into food combining, I would not eat meat and carbs in the same meal. I eat this alone and it is quite filling. There is a lot of fibre in it. It's all good, bon appetit.
